Mermaid Nibbles

This is a Bill Granger recipe that I picked up from Delicious and tried as it was touted as family friendly. It has become an absolute favourite of mine that I cook from memory. I have used it so many times thatI’m sure by now that I have increased the sauce levels as I like a bit more sauce. This dish is so good that I even use it when entertaining as it is very easy to ‘glam’ up with steamed Asian greens and a chilli lime dressing for the adults.

Why it’s good for mums
Big on flavour and no need to spice up except for chopping a few shallots.

Why it’s good for kids
It’s fish! Australia’s leading health research body, the National Health and Medical Research Council (NHMRC), suggests that Australians should eat more fish. This is because fish is low in fat, high in protein and an excellent source of omega 3 fatty acids. Omega 3 is reported to increase concentration and memory.

Ingredients
500g boneless salmon fillet, cut into 3cm cubes
2 tablespoons fresh ginger, grated
2 cloves garlic, crushed
1/2 cup oyster sauce
1/2 cup sweet chilli sauce
2 tablespoons soy
Steamed rice and vegetables of your choice

Method

  1. In large bowl, combine ginger, garlic and sauces – oyster, sweet chilli and soy.
  2. Toss salmon to coat in marinade and marinate for 15 mins to an hour.
  3. Preheat grill to high. Place salmon and marinade in a single layer on a large, shallow baking tray.
  4. Place tray under grill and cook for 7 minutes or until fish is still pink in the centre and nicely coloured on the outside.

Tips
If your kids are not keen on spice only marinate for 15 mins and when you place their salmon on the tray brush away any of the chilli, garlic or ginger pieces. Baby Bell loves this dinner but ate a piece of salmon of my plate and bit straight into a chilli piece and hasn’t been so keen to eat it since.

Hiding vegetables
Sorry no hiding vegetables in this dinner. Try one of my favourite tips of ‘bargaining’ that I learnt from the book “The Art Of Hiding Vegetables” by Karen Bali and Sally Childs.

If they don’t like any vegetables chose three different types. When they start the ‘whinge’ bargain that they don’t have to eat all three but have to eat at least one. This tactic allows them to think they have won the vegie battle. If they keep whinging, agree with them that if they try something 10 times and still don’t like it they will not have to eat it again.

Busy Mums
Its so easy to make there isn’t any shortcuts for busy mums.

2nd sitting
Cook salmon and vegetables as required and heat up rice.

Spice It Up
Finely slice 2 shallots and sprinkle on top.

Creating a Scene
Stepping Stones – Make a square of rice and press down and place cubes of salmon on top like stepping stones or nougats and crosses depending on your child’s appetite. Place vegetables in between.

Hands On

  • Measure and mix marinade ingredients
  • Toss fish in marinade
  • Decide what vegetables they would like
  • Wash vegetables

Game Time
Nougat and crosses – using a toothpick like a pen to mark either a cross or nougat on the salmon play the game and the winner gets to eat the fish! My kids always eat the crosses first pretending they are Mummy because she can get cross!

    Hi,
    I’ve used this recipe before, but had misplaced it, so went on the web and found your entry. Thank you!! We love this dish, as does everyone I serve it to. I’m cooking dinner for my (grown up) kids tomorrow night and wanted to use it then. I’ll serve it with steamed basmati rice, and steamed baby bok choy. Yummmmm!
